Mackerel nom-i-ness !!

They say the trick to healthy skin is fighting it from the inside as well as on the outside. They also say ( I don't know who THEY are by the way but they say clever things!!) that the way to healthy skin is via lots of fruit, veg and oily fish - think salmon, Mackerel etc . So, with that in mind, let me share with you one of my favourite skin boosting dishes .....

I currently don't have a name for this recipe, hence 'Mackerel nom nom-i-ness. I think it says it all !!



First up you will need .....

A packet/ fresh smoked / peppered / plain mackerel.

Greek style yoghurt - 5tbsp

2/3 onions depending on size

2 cloves of garlic

2 carrots

1 red pepper/ green pepper



Fry the onion and garlic - I like to use extra virgin olive oil (also very good for the skin). Chop and add the rest of the veg. 

At the same time grill your mackerel. This should take a few minutes , just to heat it through.




Once the veg and fish are cooked - place in a bowl . I chop the mackerel up at this point into bite size pieces. Add the Greek yoghurt and stir thoroughly. Place over a bed of rice and ta da !!! Dinner is served. Healthy, quick and oh so tasty!!


A little fresh bread provides the perfect accompaniment.
